Afy's Protein Muffins

Here’s a super easy way to get more protein in your diet AND satisfy your sweet tooth at the same time. This recipe made 8 muffins and they had about 8 grams of protein and only 70 calories each. Next time I’m going to add some almond flour to make it even better:

Ingredients:

  • 3 scoops protein powder (garden of life vanilla flavor)
  • 1 tablespoon cinnamon
  • 1 can organic pumpkin puree
  • 1 teaspoon sea salt
  • 2 tablespoons stevia
  • 1 egg

Directions:

Spray a non stick muffin pan with coconut oils spray, whisk all the ingredients together, put them in 8 muffin spots, bake at 425 for 40 minutes (it would need less time if you add flour). Take them out of the oven, let them cool, and add a little cocoa almond spread on top, and enjoy 🙂
