Some of my favorite times are when I have my niece and nephew sleep over at my house. It is constant games and laughing and of course…breakfast foods. Being 2 and 5 all they want is breakfast foods and chocolate all night long. If there are two things that I can’t get enough of it is chocolate and breakfast. So I went on line to see what I could find and found this beauty. They were so delicious and weren’t a sugar high food for them at 9 o’clock at night. Here it is from Chocolate Covered Katie. Brownie Batter Pancakes
(makes 6-8 silver dollar pancakes)
¼ cup spelt, white, or Bobs gluten free flour
1.4 tsp baking powder
1 tbsp Hershey’s Special Dark cocoa or Dutch cocoa
Pinch uncut stevia OR 1 tbsp plus 1 tsp sugar
1/16 tsp salt
1 ½ tbsp applesauce or oil (I used 1 tbsp oil and a half tbsp applesauce-the author recommended it as to not have fat free tasting pancakes)
1 tsp pure vanilla extract
5 and ½ tbsp milk of choice
Mix dry ingredients very well, then add wet. Make pancakes!!!
Needless to say we gobbled them up sleep over style with a picnic in the middle of the living room and a good old movie to fall asleep to.
