Love potatoes like I do but need to cut down on your carbs? This is the recipe for you! So simple and tastes amazing as a side dish.
- 1 head cauliflower head
- 2 red potatoes
- 1 cup greek yogurt
- salt & pepper to taste
- tablespoon garlic powder (if desired)
Wash the cauliflower and potatoes, cut them into smaller pieces, and add them to boiling water until they’re soft. Remove from the stove and drain excess water. Throw all ingredients above in a mixing bowl with the boiled cauliflower and potatoes and use a potato masher to mix everything in as you would regular mashed potatoes. Serve as a side to your favorite dish!
