Healthy Cauliflower Red Potato Mash

via Afy Jones – AVAC

cauliflower mash

Love potatoes like I do but need to cut down on your carbs? This is the recipe for you! So simple and tastes amazing as a side dish.

  • 1 head cauliflower head
  • 2 red potatoes
  • 1 cup greek yogurt
  • salt & pepper to taste
  • tablespoon garlic powder (if desired)

Wash the cauliflower and potatoes, cut them into smaller pieces, and add them to boiling water until they’re soft. Remove from the stove and drain excess water. Throw all ingredients above in a mixing bowl with the boiled cauliflower and potatoes and use a potato masher to mix everything in as you would regular mashed potatoes. Serve as a side to your favorite dish!

12 Healthy DIY Travel Snacks To Bring On A Plane

via Rachel Sanders – BuzzFeed

1. Granola Clusters

Granola Clusters

Light, crunchy, will-keep-forever snacks like this gluten free Nutty Maple Mix are the perfect for global apocalypses and/or plane travel. Get the recipe at With Style and Grace.

2. Roasted Chickpeas

Roasted Chickpeas

The only thing a chickpea likes better than being roasted with salt and olive oil and spices until it’s crispy is coming along with you on an exciting vacation. Let your legumes live a little! Get a basic roasting recipe at Cheap Recipe Blog.

3. No-Bake Prune, Walnut & Coconut Bars

No-Bake Prune, Walnut & Coconut Bars

These are a nicely desserty but good-for-you and dead easy to make: Smoosh everything in the food processor, press into pan, chill, and slice. Get the recipe at Betacyanin.

4. Clementines

They come pre-packaged in their own little travel outfits, and are way easier than oranges to peel. Also good for playing catch when you get bored.

5. Avocados + Bread

Avocados + Bread

Avocados are easy to carry around, delicious, and soft enough to spread with whatever flimsy kind of knife/credit card/other weird utensil you can (legally) find on a plane. Very nice on a couple slices of dense rye bread; I’m a big fan of this magical kind that never goes stale.

6. DIY Trail Mix

DIY Trail Mix

Trail mix you make at home is always going to be better than the little baggies you can buy at Hudson News, because what you put in it is your business and nobody else’s. Like, maybe your personal definition of trail mix just happens to be 50% pretzels and 50% chocolate chips.

7. DIY Beef Jerky

DIY Beef Jerky

Pretty sure that jerky fueled the expansion of the American West and also the moon landing and every other important journey ever made. When you make your own, it’s actually healthy (lots of protein, not much fat). Get a recipe at Clean Eating.

8. No-Bake Energy Bites

No-Bake Energy Bites

Nothing makes a long trip shorter like adorable little roly-poly snacks made of oatmeal, coconut, and peanut butter. Get the recipe at Gimme Some Oven.

9. Carrots & Radishes

Carrots & Radishes

These are ideal for traveling because they’re sturdy and good for munching on raw. Just don’t forget to wash them first; nobody likes a gritty radish!

11. Cheese & Crackers

Cheese & Crackers

Pack healthy/grainy crackers (you can get a recipe for these Flaxseed & Onion Crackers at Whole Living) with some pieces of hard cheese that will be happy at room temp: cheddar, manchego, gouda, etc. Yeah, Ritz with Kraft Singles doesn’t count.

12. Hard-Boiled Eggs

Hard-Boiled Eggs

Pack a few eggs in a tupperware container and peel them whenever you get hungry. You can snag little pepper and salt packets from an airport restaurant. Bonus points for drawing cute faces.

Then Put Everything In A Travel Snacks Kit!

Then Put Everything In A Travel Snacks Kit!

So the above items aren’t all healthy. But the idea is great: Turn a tackle/craft box into your own personal wonderland of snacks. This is so thrilling you should probably just make one and carry it around with you at all times.
