With the dog days of summer still here, take advantage of outdoor barbecuing-and be sure to transform old-style fat and calorie-laden BBQs into healthy and light summer fare. The best tip for healthy grilling is to throw lots of those delicious summer veggies and fresh fruit onto the grill as a side to lean protein sources such as fish or skinless poultry. Looking to add some taste and pizazz to those grilled veggies and lean protein? Try this super-easy antioxidant herb infused mustard marinade!
Ingredients:
- Several sprigs of fresh rosemary
- 1 cup tarragon vinegar
- 2 tablespoons extra virgin olive oil
- 6 tablespoons Dijon mustard
- 2 tablespoons fresh garlic, minced
- Dash salt
- Dash pepper
Whisk all ingredients together in a bowl. Brush onto vegetables and lean protein and marinate before grilling. (You can also simply brush on during the last 10 minutes of grilling.)
